As we are having such a lovely summer this year, I thought it was time to add another summer inspired dessert to my culinary repertoire 😊

This gorgeous grown-up ice lolly is based on an American ‘creamsicle’ a sublime mixture including fresh cream and Limoncello – yummy yum!

The ingredients are indulgent, however I do believe in ‘a little of what you fancy’ – these lollies are a modest size, so not too much damage there.

Your lollies need at least 10 hours to set, so are a perfect dessert to make ahead if you are planning on entertaining (I have a very good friend who loves Limoncello – so I will be taking some of these over on ice, when we next get a BBQ invite!)  This recipe will make 6 ice lollies.

Tangy Limoncello Ice Lollies

Limoncello Ice Lollies

  • 500 ml double cream
  • 125g sugar
  • pinch sea salt
  • 125g Limoncello
  • zest of 2 unwaxed lemons
  • 60 ml freshly squeezed lemon juice

Put cream, sugar and salt into a medium pan and slowly bring to the boil, whisking from time to time.  Simmer over a medium heat for 5 minutes.

Remove from heat & cool for 10 minutes.

Stir in Limoncello, lemon zest and juice.

Pour into lolly moulds & freeze for at least 10 hours (don’t be tempted to take out early – your lolly is likely to collapse!)
